Grapefruit & vanilla caprioska

Ingredients

2 ruby red grapefruits, unpeeled, coarsely chopped
2 tbs caster sugar
11/2 cups crushed ice
375ml (11/2 cups) chilled vanilla-flavoured vodka
185ml (3/4 cup) chilled fresh ruby red grapefruit juice
185ml (3/4 cup) chilled pineapple juice
Grenadine, to serve

Method

1. Place grapefruit and sugar in a large plastic bowl and pound with the end of a rolling pin until grapefruit is crushed.
2. Spoon the grapefruit mixture among serving glasses and top with ice. Combine the vodka, grapefruit juice and pineapple juice in a large jug.
3. Pour vodka mixture among glasses. Add a dash of grenadine to each glass and serve immediately.
